BRAND STORY
During the late Tensho era (1573-1592) in Japan, the area known as Kayabacho in Edo (now Tokyo) was transformed from reclaimed land into a bustling city as part of the shogunate’s urban planning. The name “Kayabacho” comes from the many thatch (kaya) merchants who lived in the area.
Three centuries later, in 1886, Kayabacho continued its tradition of embracing new ideas with the opening of “Yayoi Ken,” one of the first restaurants in Japan to offer Western-style cuisine, a novel concept at the time. As a district known for its quiet encouragement of innovation, Kayabacho has always been a place where people feel inspired to explore new possibilities.
We’ve interpreted the name “Kayaba” as symbolizing the idea of pursuing “what we want to achieve,” rather than “what happens no matter what.” The period in our logo represents perfection, symbolizing that the ramen we create is of the highest quality. The red symbolizes warmth and passion, embodying our promise to provide you with a heartwarming experience.

The Finest Ingredients
- By making all the ingredients of our ramen from scratch, including the soup, noodles, chashu pork, and menma (bamboo shoots), we are able to provide our customers with a truly delicious bowl of ramen. Our soup is slowly simmered to bring out the umami of all the ingredients, and our noodles are carefully handmade by our chefs in order to create a chewy texture.
- The chashu pork is braised until it's tender and juicy, and the menma (bamboo shoots) is delicately rich in flavor. By putting all this effort into every ingredient and process, our ramen is of the utmost quality, guaranteed to provide you with a special dining experience.
What is Artisan Ramen?
- In today’s ramen scene, there are two main categories.
- One is the traditional method of ramen-making that has been passed down in Japan for generations. In this method, the broth is made by simmering chicken, pork, and vegetables, the noodles are crafted by mixing flour and water, and then rolled out and cut thinly to match the soup before being boiled in the store. We refer to this as "Artisan Ramen." In Japan, it is also known as "Gachinko Ramen (Serious Ramen)."
- On the other hand, the other category includes ramen shops that use ramen products made possible by the development and spread of ramen and noodle factories. Unlike the old days when noodles had to be handmade, today, high-quality noodles can be purchased directly from factories. Even soup bases can be bought from factories. This type of ramen shop has also contributed significantly to the popularization of ramen.
- What we want to spread is the excellence of Artisan Ramen.We aim to provide our customers with a truly enjoyable ramen experience through this Artisan Ramen. By making everything from scratch—including the broth, noodles, chashu, and menma, we hope to offer our customers a unique ramen experience that cannot be found elsewhere.
Features of Artisan Ramen

- The noodles have a strong wheat flavor and a chewy texture. The shape of the noodles can also be subtly adjusted to match the soup.

THE Aim of Artisan Ramen
- Making this Artisan Ramen at home is difficult. It takes time, and the broth cannot be recreated without simmering a large pot filled with numerous ingredients. If the broth is made in small quantities, it evaporates quickly, and it won't be the same as what is served in a store.
It’s great to enjoy ramen at home by finalizing the preparation of factory-made ramen for everyday meals. - But for those special moments or when you want to treat yourself, we will continue to make this special ramen. We take pride in our commitment to providing high-quality, delicious ramen. We aspire to be the ambassadors of Artisan Ramen so that it can be enjoyed in any town in America, just like in Japan.
